Menu:

  • The pairing will begin with 2 Brittany oysters and Champagne Moutard, La Grande Cuvée.

Domaine Moutard, guardian of unique family know-how, brings Champagne to life with bold cuvées and an adventurous spirit. La Grande Cuvée is a refined expression of the Côte des Bar, mainly made from Pinot Noir and aged carefully to reveal its complexity, freshness, and enveloping texture.

  • Sea bass ceviche with tiger's milk, paired with white wine Domaine d'Henri, Chablis Saint Pierre:
    Heir to family expertise since 1850, Domaine d'Henri produces Chablis with extraordinary purity and precision, in harmony with its native terroirs. Chablis Saint Pierre showcases its minerality, freshness, crystalline elegance, and a lingering finish.
  • Braised oxtail brioche, paired with  a red wine Domaine Gayda, Chemin de Moscou.

Located in the heart of Languedoc, Domaine Gayda combines tradition and modernity to create authentic wines reflecting the diversity of its terroirs and its innovative spirit. Chemin de Moscou is a powerful and elegant blend of Syrah, Grenache, and Cinsault, with intense fruit and precise aging for a long and seductive finish.

  •  Catalan cheeses: Garrotxa goat cheese, Puigpedrós from La Cerdanya (raw cow's milk), and matured cow's cheese, paired with an oxidative wine Domaine de la Préceptorie, Vinum Praeceptoris.

Nestled in the heart of Roussillon, marked by a unique family trajectory, Domaine de la Préceptorie celebrates the richness of its old vines and Mediterranean identity through authentic and characterful wines. Crafted according to Catalan tradition, Rancio Vinum is a singular oxidative wine, aged in sun-exposed demijohns, unveiling complex notes of dried fruits, spices, and an unmistakable character.
