Wine making
Harvested at night to minimise oxidation. Slushing to avoid bitterness and herbaceous notes. Fermentation of the varieties separately at 12ºC, with a wild fermentation start.
Tasting note
Bright colour with golden reflections. Fresh aroma with floral notes in youth and pastel in maturity. Structured with a pleasant and persistent palate with notes of white fruits, slightly acidic and glyceric.
Pairing
Ideal as an aperitif or to start a meal.
Best served at 8ºC.
